Helen Haines’ Pork and Rice Casserole


Helen Haines’ Pork and Rice Casserole

Saute’ together:

1 pound cubed pork
2 cups chopped celery
1 cup chopped onion  (add onion late so it doesn’t get too brown)

Add:

1 can mushrooms (or fresh)
1 cup rice* (scalded in 2 cups water)
4 (or more) Tablespoons soy sauce

*I often use part wild rice

Bake in tightly covered casserole for 1 hour or a little longer.  The lid may be lined with foil to be sure it steams well and stays tightly covered.
