Sooo Good Stuffed Mushrooms from Christel Osthed


 
20-22 medium sized mushroom (Crimini): wash,dry, remove stems and set aside for later use.
 
Filling:
1/3 lb. bacon (finely cut)
1/2 onion (diced fine)
chop up mushroom stems
1/2 t. italian herbs
cracked pepper to taste
1 pkg. 8oz. cream cheese
1/4 c. parmesan cheese
3 T. salsa verde tomatillo
 
Fry bacon.  Add onion, mushroom stems, herbs to bacon and heat for 5-7 minutes.  Remove from heat and add cheeses and tomatillo salsa.
 
Press filling into mushroom - use all.
Dip tops of mushrooms in melted butter then into bread crumb mixture (1 c. bread crumbs, celery salt and cracked pepper to taste, 1/2 t. italian herbs)
Place mushrooms into greased 9x13 baking pan
When ready to bake add 1/4 c. water into the bottom of the baking pan
 
Bake at 350 for 20 minutes
